Amy's Fresh Guacamole

When I was young, I HATED guacamole and avocados. Part of the reason was the mushy texture, but another was that when I had guacamole, it was very simple and plain (boring), just mashed avocados with maybe some lime juice in it.

Fast forward to about 19 years ago, when my husband and I took a trip to Puerto Vallarta, Mexico. One night we ate at a restaurant called Pippi's, where they made guacamole at our table. Of course I was hesitant to try it, but the guacamole was so delicious that I was dreaming about it for months afterward.

Once we got home from our trip, I was on the hunt for a guacamole recipe that was similar to what we had eaten at Pippi's. A few months later I came across a recipe in Runner's World magazine, and after a few tweaks it has become our FAVORITE!

Amy's Fresh Guacamole
Amy's Fresh Guacamole
5 avocados
6 Tbsp chopped cilantro
1/3 to 1/2 a medium red onion, diced
3-4 jalapeños, stemmed, seeded and finely diced
1-2 tomatoes, diced
3 Tbsp freshly squeezed lime juice
1 1/2 tsp salt
1/2 tsp freshly ground black pepper

Instructions
Cut the avocados in half and remove the pits. Scoop out the avocado from the skin, place in a medium sized mixing bowl and mash with a fork or a potato masher. Add the remaining ingredients.

*Note
I use this recipe as a guide, but when it comes to the onions and tomatoes, I put in whatever amount looks good. With the jalapeños, I like to add one at a time and do a taste test until the heat seems right. Some jalapeños seem to have more heat than others and I don't want the guacamole to be too hot! Most of the time I use 4. Depending on how spicy the jalapeños are, the heat of the guacamole is around mild or medium.

List of tools used:

Potato masher: The previous potato masher I had was made of plastic, and the part that mashed the avocados was made of lots of little squares. It was a pain to clean. This masher is so much better, it is durable, easy to clean and the handle is comfortable.

Lime squeezer: We use a lot of fresh lime and lemon juice in our cooking, and using this lime squeezer is much easier than squeezing by hand. Even though it is a lime squeezer I also use it for lemons, quartering them before juicing them.

Pampered Chef Mix N Scraper: I love this scraper. I use it so often. I have had other scrapers break or even melt, but this one is so durable and it works well for mixing too.
